Carrot & Jalapeño Escabeche


A bright, spicy, and perfectly balanced escabeche that adds crunch, acidity, and warmth to just about anything. Spoon it over tacos, serve it with roasted meats, or tuck it into a sandwich for that extra bite of texture and heat. We served this alongside a skirt steak tlayuda at our OpenTable dinner, and it was the first thing to sell out. People couldn’t get enough.
