Lately, gin has pretty much taken over our homes—seriously, it’s become our spirit of choice, and we’re not mad about it. TJ’s gin collection is starting to look like something out of a museum (it even got featured in a story—link here!), and let’s just say it’s grown into quite the obsession. With all the new Mexican gins hitting the market, it’s been a total adventure exploring their different flavors. As chefs, we love playing with the different gin flavor profiles and that’s how this Clover Club came to be. With Condesa Gin at its heart, it’s a floral, citrusy, and perfectly tart cocktail.
