One of TJ’s superpowers is crafting some of the most incredible aguachiles and ceviches I’ve ever had. We both love exploring food through travel—eating our way through cities, finding inspiration in dishes that leave a lasting mark.

For me, one of those dishes is Jitlada’s Thai papaya salad in LA. My family and I have been going there forever, and its bold, unapologetic flavors are ingrained in me. So when I was in New York and TJ took me to SriPraPhai for Thai food, something clicked. We had a moment—the kind that lingers, imprints itself on you, and begs to be shared with the world.

It’s funny how our food minds work together like that. This dish is the result—Oaxaca meets LA and NY with a hint of Thailand. Because let’s be real... There's nothing more LA or NY than an Oaxacan-Thai aguachile mashup.
